Turning poverty health food into gourmet dining, Zucchini and Turkey.
All the people out there looking for something to eat tonight that is cheap, healthy, hits your macro’s, hits your calories, tastes damn good, and looks awesome will be thanking me after this one. I know a lot of people are going to Costco and buying huge packs of ground turkey trying to figure out what to do with it so here you go.
All in all this is a meal that has less than 300 calories, the amount of sauce you use will determine your carb intake on this one.
What you will need
- Tomato Sauce, or use store bought
- Zucchini, 1 per person
- Ground Turkey
- Parsley for Garnish
The spiralizer is a fun tool that lets you make boring stuff not so boring, so I played with it some more by spiral cutting some Zucchini. Essentially you just stick it into the hole and twist and what comes out are long strands. Its alot like a julienne peeler but it lets you make strands that can be as long as 3 feet from a piece of zucchini that is only 8 inches long.
People come over and ask me how I did it.
Not really…$9 tool…but don’t tell them that.

Meanwhile I just browned the package of ground turkey.
I added alittle sauce to the turkey.
At that point I just boiled a pot of water, once it was boiling I dropped the zucchini strands into the water and let it come back to a boil. Gave it about 1 minute boiling and that was enough.
Strained the zucchini and plated, if you’re vegetarian you can just leave it like this and add some sauce.
But if you want to make an epic meal out of it, then place the turkey on top, a bit of sauce on the turkey, a dusting of parmesan, then a sprig of parsley for garnish.
Voila, impress anyone that comes over with less than $4 of food.
